As you point out, extra virgin olive oil is probably underrated outside of Europe, and the push against animal fats is overrated by current nutritional advice. I did a little exploring about animal fats and was surprised to find what we might be missing out on by pushing them out of our diet. I’m all for more vegetables and increasing plant-based components of our diet. But I don’t think that means we should ignore the benefits of dietary animal fats.
